These are Natural Fruit ports made in a traditional European style with an emphasis on the fruit and not on the alcohol. All of the members of the Attitude family are made using the traditional port method. Ports are made by inoculating the juice, of whatever fruit is being used, with yeast. The sugar level is carefully monitored every few hours until it drops to the desired level. Every winemaker has their own way of determining what the level should be. The fermentation is then stopped by adding high proof wine spirits (neutral brandy usually 180 - 190 proof). The brandy literally stops the fermentation by quickly raising the alcohol level.
